"B.I.-Weizen®" · “The Mirage”

I could say that B.I. Weizen® is an excellent beer because it is an almost perfect balance between aroma and a fresh taste, fundamental characteristics of Weizen or Weisse beers. I could tell you that its alcohol content is sufficiently low to prevent weight gain and bloating – which are apparently unacceptable in this modern day – and that you can therefore drink as much as you like. I could tell you it is better served with a slice of lemon, or without….but I would be lying. “When summer is at the height of madness and hormones flow uninterrupted from the tip of the toes to the brain and back, when the heat vaporizes all coherent thought and only primeval instincts remain – the real ones that count – when thousands of people are taking a dip in seas around the world and are indulging in sweet idleness, then I’d like to take the most marvelous woman by the hand, tap off two half-liters of "B.I.-Weizen®" and walk slowly but surely to the cellar and finally dive into Fermentation Vat number 3, the "B.I. Weizen®" one (indispensable accessory for the complete fulfillment of body and soul). “In this dreamy delirium, the brewer wears gaudy yellow floral print Bermudas and dark sunglasses, while the marvelous woman only wears her birthday suit. The soundtrack is chosen from among the funkiest Surf Music, and everything clicks. Bear in mind that in reality my self-control is remarkable, my professional deontology would prevent a similar action which I am sure would be contrary to the HACCP Quality System that we have adopted, and the most marvelous woman might not be the craziest chick around. Technical Chart: 
It is a Bavarian-style Weizen (made with a blend of barley and grain malt) produced by way of decoction, with 5% alcohol by volume (12 Plato degrees). Aromatic and refreshing, it is more effervescent than other Birrificio Italiano® beers. It can be served with a slice of lemon or au natural. It is always rather cloudy because one of the yeast strains used is not easily decanted. For the record, adding lemon is a German tradition that was originally introduced to cover the unpleasant acidic flavor of old beer. Unpasteurized Weizen is very delicate beer that does not have a long shelf life.

Ingredients: 
Water, softened with a total hardness of approximately 30 French degrees.

Hops: Hallertauer Magnum (1st and 2nd addition). Tipopils® wort is added before maturation, which provides another bitter touch; Pilsener (45%) and Weizen (55%) malts from France and Germany.

 Saccharomyces carlsbergensis brewer’s yeast (from the addition of Tipopils®) and Saccharomyces cerevisiae from the laboratories of the Brewery University of Baviera (Weihenstephan).

B.I.-Weizen


From the tasting sessions held at Birrificio Italiano® in June 1998, during the seminars entitled “Una passione, una cultura, una technologia: la birra! [Passion, culture, technology: Beer!”] .

Tasting Notes: 
A pale yellow beer with a thick, white, persistent head and a slight perlage. Substantial carbonic saturation. Distinguishing characteristics: a fresh, tangy taste (citric). Medium intense characteristics: yeasty flavor; aroma and fragrance of fruit (pears and bananas) and fresh yeast. Weak characteristics: bittersweet flavor and bitter aftertaste; sweet floral smell and aroma (wisteria and dandelion), and green apple.
