Cassissona – “The Exhuberance”
Millions, trillions of bubbles sparkle on the edge of the glass, tickling the nostrils, teasing the lips, agitate the throat… Running on some strange kind of direct line they reach the few neurons left, asleep, kicking them to rumble and bounce against the cranium as in a gone-crazy pinball. Cassissona awakes body and mind, hormones, and senses; it’s an invigorating, elegant experience, delicate but not feeble, whose irrepressible energy is flaunted as a warcry.
Original Extract: 17°Plato
ABV: 6,5 %
Colore: Intense apricot with pinkish nuances
Its exhuberant, fine, sparkling champagne-like froth – mottled with precious pink undertones – together with the vaguely opaque, pastel orange hue opens up the imagination, preparing it to receive with the sense of smell a triumph of yellow-pulp fresh fruit, of remote flowering meadows, of loved-one’s skin... In the mouth, a subtle sweetness balances the carbonation, repeating the olfactory sensations, picking up on the way a neatly recognizable hint of blackcurrant (which is actually added during the brew) which introduces, with its light acidity, a persistent fruitiness. The sip is finally completed by a bold hopping, bestowing dryness to the alchemy.
This beer can be aged, evolving and improving! The right moment falls within 30 months from bottling... Maybe beyond ;) . Keep below 10ºC.
Serve as a rescue remedy to the excessively even-tempered and those affected by chronic brain laziness. It goes great with riverside tantric rituals, to early fall sunsets, to breakfasts in bed, to the aperitifs threatening to last way longer than normal, to cow milk white-rind cheeses and to fruit salads, or to more tempting custard-filled puffs.
